Red beans and rice (trust me on this one)

Am I making this a cooking blog now? Probably not, because that would indicate that I routinely remember this site even exists!
Note: this recipe requires a pressure cooker/instant pot. If you don't have one, I hope it's because you have zero counter space, as they absolutely fucking rule. Get an air fryer too, but it's not necessary for this particular dance.
Basic ingredients:
1 cup dried red beans
1 cup brown (or whatever type) rice
1/2 cup vegetable (or whatever) broth
1/2 white onion, diced
1 small red pepper, diced
3 garlic cloves, minced
1 bay leaf
Spice blend:
1/2 tsp. ground cumin
1/2 tsp. dried parsley
1/2 tsp. dried oregano flakes
1/4 tsp. celery salt
1/4 tsp. cayenne pepper
1/4 tsp. salt
Instructions:
Soak dried beans overnight in ~1+1/4 cups of water
Mix spice blend together, so it's ready later
Cook rice with 1+1/2 cups water in rice cooker or stovetop (in the latter case, use Martha Stewart's method - I know, I know, but it works)
Meanwhile, pressure cook beans with their remaining water, adding in 1/2 cup vegetable broth
Sauté onion, pepper and garlic until fragrant while the other shit is happening and then mix it with the finished rice
Once everything is ready, combine the rice/vegetables and spice blend with the beans and the leftover liquid in the pressure cooker
Slow cook, covered, on low for 30 minutes with the bay leaf
Salt if you need to, but you're home free from here, my friend
Serves about four and is cheap as hell if you have even a remotely decent spice rack.
